Storage and display of seafood

In response to recent enquiries received, Safe Food Production Queensland wishes to clarify that we are not advocating or mandating any changes to industry practices regarding the display of fresh seafood.  It is long established industry practice and custom for seafood, including whole fish and fillets, to often be presented in open display cases on ice.

These sorts of seafood product displays are considered to be appropriate subject to a few simple rules being followed, in addition to adherence to ordinary hygiene procedures. In summary:

  • the temperature of the product should be maintained at or below 5C
  • the display should be adequately supervised by staff so that product is not handled by customers.  This can be supported through the use of signs
  • the display should be in an area that limits the potential for contamination
